Kanshoku Ramen Bar is a Singaporean owned ramen chain with branches currently in Buona Vista and Orchard Gateway near Somerset. The usual tonkotsu (pork broth) ramen in Kanshoku Ramen Bar is nothing to shout about but if you’re going there for their Truffle Ramen (dry) then that’s a whole different story. It’s the first time I’ve ever come across Truffle Ramen and believe me I’ve eaten A LOT of ramen having lived in Japan for nearly 4 years. Their handmade ramen noodles are perfectly cooked and chewy with just the right amount of seasoning of salt, truffle oil and truffle shavings. The accompanying pieces of fried chashu pork are deliciously tasty too.
They also have a new Truffle Broth Ramen which is only currently available at their Orchard Gateway branch and is basically their signature tonkotsu broth ramen with truffle pate, shaved truffle and truffle oil added to it. It’s definitely a step up on their tonkotsu ramen which I personally don’t think is anything special. You can certainly taste the truffle in it but if you’re going to go for a truffle ramen I would recommend getting the dry one as it has a stronger truffle flavour, as the tonkotsu slightly overpowers the truffle flavour in the truffle broth.
Their Signature Tonkotsu Ramen is ok but it’s not as rich as the ones you would find in Japan which is fine if you don’t like too rich a flavour. Their Spicy Tonkotsu Ramen is ok too, it isn’t really spicy and not something I would get again there.
Service at Kanshoku Ramen Bar is polite and very efficient. You have to first mark your order on an order sheet which allows you to specify how soft/hard you want your ramen noodles and any add-ons, side dishes or drinks that you wish to order with it and then you pay at the till near the kitchen area. Food is usually served within minutes of placing your order. It’s a very casual place and great for having a quick meal.
