Ikkousha Hakata Ramen, a Japanese ramen chain from the Hakata ward in Fukuoka in Japan famed for it’s rich tonkotsu (pork bone broth) ramen, is one of the most popular ramen restaurants in Singapore with two branches, one in Tanjong Pagar Plaza and the other in Chijmes near City Hall.

It had been a couple of years since I last visited Ikkousha but as I was invited for a meal there courtesy of JPassport, I gladly paid it a visit last Saturday for lunch. Ikkousha serve several different types of ramen including Tonkotsu Standard which is their signature tonkotsu ramen, Special Tonkotsu Ramen (tonkotsu ramen with extra toppings), Black Tonkotsu Ramen (tonkotsu ramen with fried garlic paste), Shio Tonkotsu Ramen (light tonkotsu broth ramen with salt and has a slightly fishy flavour), God Fire (spicy tonkotsu ramen), Bonito Ramen (pork, chicken and bonito fish broth ramen) and Dried Fish Soy Sauce Ramen (pork, chicken, bonito and soy sauce light broth ramen). You can also get additional toppings for your ramen as well as order side dishes such as gyoza (pan fried dumplings), karaage (fried chicken), fried rice, plain rice or a mini donburi (rice with toppings). Water is available on each table but they also have soft drinks, green tea and Japanese beer on the menu.

An order sheet is given to each diner so that you can select your order and also choose what noodle texture you would like and how salty you would like the broth. I went for their signature ramen, the Tonkotsu Standard, which comes with chashu (braised pork), wood ear mushrooms and spring onions and I chose a hard noodle texture and the saltiness of my broth to be normal. After I selected my order and handed the order sheet to the waitress, within minutes I was given my steaming hot bowl of tonkotsu ramen.

There are several different condiments available on the table so that you can spice up your ramen a bit or add more flavour and there’s even a handy guide that shows you what each condiment is used for. I usually add crushed sesame seeds as the ramen is absolutely delicious with it. Complimentary hard boiled eggs are available on the table too which you can eat with your ramen.

The Tonkotsu Standard was heavenly, the broth was rich, creamy and full of flavour. The ramen noodles were chewy and firm since I selected the noodle texture to be hard, there was a generous amount of crunchy wood ear mushrooms and spring onions as well as two pieces of chashu. The chashu was tender but maybe not as melt in the mouth as the chashu usually found in other ramen restaurants. Nevertheless it was a hearty and very tasty bowl of ramen, as good as any that you would find in Japan.

Service at Ikkousha was polite and very efficient and I would definitely recommend this restaurant if you’re a ramen lover. It’s a great place for a quick and casual meal or do as the Japanese do and eat there after a couple of drinks as it’s great for soaking up all the alcohol 🙂
